1 cup Dahi (Yogurt) 1 cup Besan (Gram flour) Salt (as required) 1/4 tsp Turmeric powder 1 tbsp Ginger/Garlic/Green chilli (pounded) 1 Lemon juice 3 and half tbsp Oil (hot) pinch of Soda bicarbonate 3 and half tbsp Sooji (Semolina) 1 tbsp Sugar Baghar/Temper: 1 tsp Mustard seeds 1/2 tsp Cummin Seeds Few Curry leaves 2 tbsp Coconut (grated) Salt (as required) 1/2 tsp Sugar 4-5 Green chillies (flakes)
keep a big pot for steaming, or dhokra steamer on flame with water. Mix all ingredients together to smooth batter, when water starts boiling add one and half teaspoon of ENO fruit salt in batter and stir well, pour on a small greased thhali, sprinkle chilli powder. Keep for steaming till done. When done cut squares Garnish: make baghar of mustard and cummin seeds, sesame n green chillies with curry leaves pour over dhokra sprinkle coconut, finally garnish with chopped corriander leaves.
