Ingredients
Serves 4
whole wheat flour 1 cups
vanilla protein powder 1/2 cups
baking powder 3 1/2 tsp
salt 1 tsp
large egg 1 nos
melted coconut oil 1 tbsp
vanilla 1 tsp
milk (you can also use non dairy milk such as almond or soy milk)* 1 1/2 cups
chopped strawberries 1 1/2 cups
honey 1/4 cups
Directions
In a medium size mixing bowl, whisk together flour, protein powder, baking powder, and salt. Add egg, coconut oil, vanilla, and milk. Stir until just combined.
Heat a non-stick skillet on medium heat. Grease with coconut oil or cooking spray, if desired. Pour ⅓ cup of batter on the hot skillet and cook until the pancake bubbles on top and the edges begin to dry, about 2 minutes. Flip and cook on the other side for another minute, or until golden brown. Repeat with remaining batter.
Combine strawberries and honey in a small saucepan over medium-low heat until boiling. Cook for 5 minutes, until the strawberries break down. Use a fork to mash any large pieces.
