Ingredients

Serves : 4
  • 1 cups whole wheat flour


  • 1/2 cups vanilla protein powder


  • 3 1/2 tsp baking powder


  • 1 tsp salt


  • 1 nos large egg


  • 1 tbsp melted coconut oil


  • 1 tsp vanilla


  • 1 1/2 cups milk (you can also use non dairy milk such as almond or soy milk)*


  • 1 1/2 cups chopped strawberries


  • 1/4 cups honey

Directions

  • In a medium size mixing bowl, whisk together flour, protein powder, baking powder, and salt. Add egg, coconut oil, vanilla, and milk. Stir until just combined.
  • Heat a non-stick skillet on medium heat. Grease with coconut oil or cooking spray, if desired. Pour ⅓ cup of batter on the hot skillet and cook until the pancake bubbles on top and the edges begin to dry, about 2 minutes. Flip and cook on the other side for another minute, or until golden brown. Repeat with remaining batter.
  • Combine strawberries and honey in a small saucepan over medium-low heat until boiling. Cook for 5 minutes, until the strawberries break down. Use a fork to mash any large pieces.
