Ingredients

Serves 2

  • Lemon juice (7 -8 Indian lemons/3 – 4 Meyer Lemons or the big sized lemons available abroad) 125 ml

  • powdered sugar (more if required) 6-7 tbsp

  • grated Lemon zest 1 tsp

  • Ice cubes as required 6-7 nos

  • Water 150 ml

  • Lemon slices to decorate 2-3 nos

  • Water/Sparkling water/soda as required 200 ml

  • Mint leaves (optional) 3-4 nos

Directions

    Heat the 150 ml water and sugar and bring to a boil.Reduce to the lowest heat and add the lemon zest.Boil for 5 minutes and take off heat.Let it come to room temperature and add the juice.Pour into a glass or ceramic jug and chill for 2 hours.

    While serving add a quantity of ice into 2 glasses.Pour over half of the prepared lemon syrup and pour over the water/sparkling water/soda as desired.Decorate with lemon slices and serve immediately!

    For a change I froze Mint Leaves,Pineapple and Grape bits in ice cube moulds and added them for a peppy addition!
