Description

This is a mini version of the classic Red Velvet Cake which is one of the more popular offerings in bakeries all across the country. Kids or adults, majority love this flavor. Can be used as a tea time snack, as a dessert , or can be decorated with different kind of frosting on your choice. I love plain mini Cup cakes on this flavour. So enjoy.

Ingredients

Serves : 30
  • 2 1/2 cups flour


  • 1/2 cups unsweetened cocoa


  • 1 tsp baking soda


  • 1/2 tsp salt


  • 1 cups butter,softened


  • 2 cups sugar


  • 4 nos eggs


  • 1 cups sour cream


  • 1/2 cups milk


  • 1 ounces red food colour


  • 2 tsp pure vanilla extract

Directions

  • Preheat oven to 350 degrees F. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.
  • Beat butter and sugar in large bowl with electric mixer until light and fluffy. Beat in eggs, one at a time. Now, Mix in sour cream, milk, food color and vanilla essence. Gradually beat in flour mixture until just blended. Do not over beat. Spoon/Pipe batter into 30 paper-lined muffin cups, filling each cup 2/3 full.
  • Bake 20 minutes or until toothpick inserted into cupcake comes out clean. Cool in wire rack for 5 more minutes. Remove from pans; cool completely. Serve & Enjoy!!!
