Description

Here is the recipe for Beef Ularthiyathu ((Beef dry fry with coconut pieces), a Kerala specialty and all time favourite. This can be served as starters or as a side dish with rice, roti etc.

Ingredients

Serves : 2
  • 4-5 nos for marination: small onions


  • 2-3 nos ginger


  • 2-3 nos garlic


  • 2-3 nos green chillies


  • 1-1 1/2 tbsp spices: red chilly powder


  • 1 1/2 - 2 tsp coriander powder


  • 1/2 tsp turmeric powder


  • 1 tsp pepper powder


  • 1 - 1 1/2 tsp garam masala


  • 1 tsp salt,to taste


  • 1/2 cups coconut pieces (bite sized)/thengakothu


  • 2 tsp vinegar


  • 1 cups for tempering : cooking oil


  • 1 sprig curry leaves


  • 1 tsp whole spices:cloves,cardamom,cinnamon,whole black pepper


  • 1 kgs beef,chopped

Directions

  • Wash and cut beef into similar pieces.
  • Marinate the beef pieces with ingredients listed under Marination and keep it aside for 15-20 minutes. Now add vinegar and coconut peces and pressure cook the beef with minimal water till it is done (20-25 mts). Cook till any excess water is dried off.
  • I used a mix of dried red chilly crushed mixed with Kashmiri chilly powder.
  • Heat oil in a pan, fry curry leaves, the whole spices and then add the cooked beef. Stir occasionally and add little oil in between. Fry for 10-15 minutes till you are satisfied with the final colour of the dish (very dark, some prefer it black).
  • Garnish with sliced red onion & serve hot.
