In half cup of warm water, put the yeast and sugar and set aside for ten minutes until bubbles form on the top
Sift 2 cups of maida and add salt, if you want to go with wheat in order to make the bread half brown, replace 1 cup maida with Ata, the same you use to make chapathis.
Slowly mix the water with yeast while mixing with the flour. Keep dusting with maida until you form a non sticky ball
Knead the dough slowly for 10 minutes, set the ball of flour aside for 60 minutes, use cling fling to cover it.
Grease the bake tray with butter or Ghee
You will find it doubled in size and its airy and light when you touch it. Knead another 5 minutes and lay it out onto the bake tray by gently laying it at the base.
Cover with cling fling for and leave aside for another 60 minutes
Preheat oven to 210 Degrees and put in the bake tray, the smell will be divine, open after 20 minutes, cut and serve
