Ingredients

Serves : 2 serving
  • 2 large onion


  • 1 large tomato


  • 2 Sprigs curry leaves


  • 1 Teaspoon corriander powder


  • 3 Teaspoons chilli powder


  • 4 eggs


  • coconut oil


  • 1 Pinch turmeric powder


  • 6-7 Cloves garlic


  • 1 small piece of ginger chopped

Directions

  • Hard boil the eggs, peel and keep aside. Put slits on the eggs with a knife.
  • Heat 4 tablespoons of coconut oil in a kadai. Fry the ginger and garlic and add the onions (Long sliced) and curry leaves. Add turmeric powder, chillli powder, corriander powder and salt and saute till it becomes dark brown.
  • Add the tomato and saute again till it merges with the onions. Add the eggs and fry for 2 minutes.
