Ingredients
Serves : 2 serving
2 large onion
1 large tomato
2 Sprigs curry leaves
1 Teaspoon corriander powder
3 Teaspoons chilli powder
4 eggs
coconut oil
1 Pinch turmeric powder
6-7 Cloves garlic
1 small piece of ginger chopped
Directions
Hard boil the eggs, peel and keep aside. Put slits on the eggs with a knife.
Heat 4 tablespoons of coconut oil in a kadai. Fry the ginger and garlic and add the onions (Long sliced) and curry leaves. Add turmeric powder, chillli powder, corriander powder and salt and saute till it becomes dark brown.
Add the tomato and saute again till it merges with the onions. Add the eggs and fry for 2 minutes.
