Description

With all the savoury versions of a Frittata out there, I thought it was time it went sweet. How is it? Well, its ok, it could have done with a little more sugar, so if you like you sweet stuff sweet, then tweak the recipe accordingly

Ingredients

Serves : 4 serving
  • 1 1/4 Cups strawberries, frozen


  • 10 Teaspoons brown sugar


  • 3 eggs


  • 1 Cup granola


  • 1 Teaspoon vanilla essence


  • 2 Tablespoons chocolate chips

Directions

  • Pre heat the oven to 350 degree Fahrenheit. While is oven is getting heated up, in a skillet that is oven friendly throw in the strawberries and brown sugar. Turn the heat down low and let it mix well. After about 2 minutes, the strawberries would have thawed and the sugar melted.
  • Let it thicken a bit. Strain and keep aside any extra liquid.
  • Take the pan off heat and top the strawberries with the granola. Sprinkle with the chocolate chips
  • Beat the eggs and vanilla together. One way to add more sweetness to the recipe would be to add a bit of sugar to the egg. I did not do it though.
  • Pour the eggs over the granola and pop it into the oven. Bake for 15 minutes or until the eggs are cooked all the way through.
  • Cut yourself a nice big slice and eat!
