Chickpea & Cauliflower Rice - Low Carbs

Ingredients

Serves : 2
  • 1 bag x Cauliflower rice


  • 1 x can of chickpeas


  • 1/2 onion


  • 1 tea spoon of garlic salt


  • 1 tea spoon of olive oil


  • 100g of fresh or frozen spinach


  • 1 tea spoon of sweet soy sauce


  • 1 tea spoon of sesame oil


  • 2 pinch of salt


  • 1 pinch of cracked pepper

Directions

  • Olive oil in a pan, and add the onion, chick peas, a pinch of salt and fry gently for 7min
  • Defrost spinach, and cook then in microwave for 1min with butter, salt and pepper
  • Add cauliflower rice to frying pan when chickpeas start to fry nicely, and cook it all for 7min, add sweet soy, sesame oil & pepper
  • Give a stir to spinach, and add to the pan. Toss for 5 min
  • Voila !
