Ingredients

Serves 5

  • 1 Whole Chicken

  • 1 Lemon

  • 8 pc Cherry Tomatoes (Slice into Halves)

  • 2 pc Yellow Onions

  • 1-2 pc Broccoli (Floret)

  • 2 tsp Fresh Thyme

  • 3 tbsp Extra Virgin Olive Oil

  • 3 tsp Sea Salt

  • 2 tsp Black Pepper

  • 5 ml Honey

  • 50 ml Red Wine (Can be served to children because the alcohol will dilute after cooking)

Directions

    Wash the Chicken until clean inside & outside. (Rub it with Salt for 1-2 hours to let the raw smell dilute and then wash it clean.)

    Prepare the Casserole Pot.

    Place the Chicken in the middle of the Pot.

    Marinade the Chicken with Sea Salt, Black Pepper, Thyme and Olive Oil. Rub it thoroughly inside and outside to bring in the flavours.

    Use the Zester and zest the Lemon skin. Sprinkle the Lemon Zest on top of the Chicken.

    Cut the Lemon into halves. First half is to be squeezed into the cavity of the Chicken and stuff it inside the Chicken. Put Salt, Black Pepper and Thyme also inside the cavity. The other half is to be squeezed outside the skin of the Chicken and just lay the Lemon beside the Chicken.

    Place Tomatoes, Onions and Broccoli around the Chicken. (If have extras then stuff it inside the chicken, it will bring wonderful flavours.) ^^

    Pour the Red Wine all around and on the Chicken.

    Preheat the oven to 375 Degrees. put the Chicken into the oven after preheated for about 1 Hour or so. (If its a big Chicken it might take a longer time.)

    After 1 Hour or so, brush a layer of Honey on the Chicken to glaze it. Then, put it back into the oven for 10-15 minutes.

    After that, take out the Chicken. Poke it into the Chicken with a Fork or a Chopstick to check if it is cooked. (If it goes through smoothly, it is cooked.)

    Served it with the Casserole on the table. Prepare a Fork and a Sharp Knife (Better with jag teeth) to slice the Chicken when served.
