Heat olive oil over medium-high heat. Add onion and fry for 5 minutes.
Add ginger and cook for 30 seconds. Add carrots and sweet potato and cook for 1-2 minutes.
Add stock and bring to a boil. Reduce heat to low and add seasonings. Cook on a gentle simmer for 20 minutes.
Turn off heat and use an immersion blender till smooth
Add garlic and stir, serve warm
