Ingredients

Serves : 2
  • 1 Tbsp olive oil


  • 1 leek, thinly sliced


  • 6 carrots, chopped


  • 1 small piece ginger, grated


  • 3 cups vegetable stock


  • 2 cups water

Directions

  • Heat oil over medium heat, add leaks, carrot and ginger. Fry for 8 minutes.
  • Add stock and water and bring to the boil. Reduce heat to medium-low and simmer, covered for 20 mins.
  • Remove from heat and use an immersion blender to smooth out. Season with salt and pepper.
