  • In pan hot oil add paanchforon, dry red chilly, add potato, pumpkin fry it and keep aside add zucchini fry it keep aside, add eggpkant fry for few minutes and keep aside in another bowel. Now add bit oil add a tsp turmeric , chop saag add it in oil add red chilly powder, salt ,sugar cook for few minutes ,add all veggies but no eggplant cook it with cover for 5 minutes,once saag leaves water add eggplant cook for 5 minutes once eggplant boil a bit not to over cook, before gas off add ginger cook for another 2 mins. Turn gas off add a tsp ghee, green chilly full item should be done in low to medium low flame,to retain taste, texture

  • In pan add mustard oil, paanchforon, dry red chilly , add potato, zucchini, pumpkin fry it for few minutes, keep aside now add Chinese eggplant fry for few minutes once it changes color keep aside. Now add a tsp turmeric,finely chopped spinach ,add salt, sugar, red chilly powder cook for few minutes add all veggies except eggplant. Once saag leaves water add egg plant ,add ginger cook for another few minutes turn gas off , add ghee and serve hot with rice
