  • Eggs 4, spinach 10 pcs, corriender leaves half handful , vermicilli, zucchini 1/4 part slice and fine chopped, potato 1 fine chopped, onion fine chopped 1, ginger 2 tsp finely chopped capsicum 1/4 fine chopped, green chilly 4 , mushroom 4 fine chopped, soybean 8 pcs boiled and smashed, mozzarella cheese, cheddar cheese, white oil ,salt, chilly powder.

Directions

  • Take a pan heat 4 tablespoon oil add all ingredients and stir fry till water content leaves the veggies and soyabean ,add salt, green chilly, green chilly po wder and keep aside. In other pan pour vermicilli dry roast till it gets brown . Keep aside vermicilli. Now in mixture bowl add veggie fried and take egg yolk and stir nicely together, after this take a pan add 1 tsp oil ,low flame add egg viggie mix add vermicilli roast by crushing with hands, and morzella and cheedar cheese from top ,once egg gets thicker just flip it. Once done decorate with onion, capsicum, spinach and 2 types of cheese. serve hot with ketchup.
