1/2 cup Cornmeal 1/2 cup All Purpose flour 1/2 tsp Salt 1/2 tsp Baking powder 1/2 tsp Paprika 1 Egg 1/4 tsp Yellow color 1 tbsp Oil (Olive) Topping: 1 Onion (chopped) 1 Tomato (chopped) 1/2 cup Sweetcorns 1/2 Avocado (chopped), optional Few Parsely or Cilantro (chopped) 2 Jalopenos/Green chillies (chopped) 1 Lemon juice 1/2 tsp Salt
Directions
1) Mix dry ingredients very well, add oil and egg then mix well 2) Use water to bind the dough, knead well to softer dough 3) Cover for fifteen minutes 4) Make two balls of the dough 5) Dust working table and roll to very thin roti 6) Cut in triangles, when both balls done making triangles, poke with fork or toothpick on each triangle, so it does not puff up when frying 7) Deep fry on medium flame to crispy nachos 8} Let it cool down then store in airtight jar.... Filling: Mix all in well in a bowl
