First of all take a pan and put desicated coconut in it and roast it just for second's color should not change, just raw smell removed.
Now take out the roasted coconut in a bowl, add condensed milk and mix it well.
Now add vanilla essence and mix well.
Now divide this mixture into 2 parts. In first Mixture add the red color and mix well. Red colour mixture is ready and the second part remain white
Now first of all spread the red colored mixture like chapati
Now spread the white mixture over the red color mixture, and roll it slowly, make a roller.
Wrap the roll with clean wrap.Now keep the rolls for 2 hours to set in freeze. The roll will set after 2 hours. Now take it out and cut it into round shape .
Now serve the coconut Swiss roll, garnished with Cherry and pistachio
