Ingredients
Serves 4
150 grams of spaghetti
50-100 gms of bacon, cut into small pieces (Optional)
6 Green Onions (leaves and bulbs)
4-6 garlic cloves
3 Chillies (optional, to taste)
2 tbsp salt, (plus more to taste)
1/2 tsp pepper powder
1 medium head of broccoli
Directions
Fill a large pot with water halfway through. Add 2tbsp salt. Bring to boil.
Submerge the pasta. Go slow if it doesn't fit all at once.
Boil pasta until cooked to preference. Taste one hair, and stop when it's only slightly undercooked. Takes 15-20 minutes.
Heat the bacon in a large pot / pan. Add broccoli florets. Toss around for 5-7 minutes. Then take them out.
Separate the onion bulbs, thicker stems, and leaves. Cut the bulbs into bite sized piece if needed. Cut the stems into fine rings. Chop the leaves roughly.
Heat oil in the same pan / pot. Add the green onion stems, and garlic and chillies. Then add the bulbs and toss for a while.
Once the pasta is cooked to satisfaction, drain it out, but keep some water aside.
Add the drained pasta, and cooked bacon and broccoli to the pan with the onions and garlic. Add the salty pasta water, and after tasting, add more salt if needed.
Add onion leaves. Toss around.
Cover and cook for 5-7 minutes. Sprinkle pepper just before serving.
