Broccoli Bacon Pasta

Ingredients

Serves : 4
  • 150 grams of spaghetti


  • 50-100 gms of bacon, cut into small pieces (Optional)


  • 6 Green Onions (leaves and bulbs)


  • 4-6 garlic cloves


  • 3 Chillies (optional, to taste)


  • 2 tbsp salt, (plus more to taste)


  • 1/2 tsp pepper powder


  • 1 medium head of broccoli

Directions

  • Fill a large pot with water halfway through. Add 2tbsp salt. Bring to boil.
  • Submerge the pasta. Go slow if it doesn't fit all at once.
  • Boil pasta until cooked to preference. Taste one hair, and stop when it's only slightly undercooked. Takes 15-20 minutes.
  • Heat the bacon in a large pot / pan. Add broccoli florets. Toss around for 5-7 minutes. Then take them out.
  • Separate the onion bulbs, thicker stems, and leaves. Cut the bulbs into bite sized piece if needed. Cut the stems into fine rings. Chop the leaves roughly.
  • Heat oil in the same pan / pot. Add the green onion stems, and garlic and chillies. Then add the bulbs and toss for a while.
  • Once the pasta is cooked to satisfaction, drain it out, but keep some water aside.
  • Add the drained pasta, and cooked bacon and broccoli to the pan with the onions and garlic. Add the salty pasta water, and after tasting, add more salt if needed.
  • Add onion leaves. Toss around.
  • Cover and cook for 5-7 minutes. Sprinkle pepper just before serving.
