  • 1 onion

  • 3 potatoes

  • 300 g boiled chicken

  • 6 eggs Extra Virgin Olive Oil Seasonings: Salt and pepper

    For preparation: - Cut the onions into slices; - Cut the potatoes into slices make sure that they are neither thick or thin. It will help to cook them equally; - Prepare chicken by boiling them, and cutting them into slices; - Put eggs separately in a bowl.

    For cooking: - Put the extra virgin olive oil into the pan; - When it is heated add onions and stir it, the idea is to make them caramelized; - After 5 min add potatoes and mix them all together. Add a little more oil, the aim is to make them as soft as possible. It takes 10-15 minutes to get softed potatoes. You can add chickens to have mixture of tastes. - Take the warm food and put it in the bowl where the eggs are, mix them together. Close the bowl with tin foil and let it rest for 10-15 min. - Use the pan and add olive oil. When it is ready, add the mixture to the pan and distribute it evenly. Shake the pan, to not burn the meal. Cook the food at maximum heat for 1 min, after that you cook it in low heat for 2 minutes. Take a plate bigger than your pan and flip the food onto it. Now slide the uncooked side onto the pan so both sides are cooked. Cook this side similar to the first, 1 min at high heat, then 2 min at low heat.
