  • INGREDIENTS:- GRATED ZUCCHINI 1 No. FRESHLY CHOPPED PARSLEY 2 Tsp. CHOPPED GARLIC 1 Tsp. SPRING ONIONS 2 Tsp. CUMIN POWDER 2 Tsp. SALT TO TASTE BREAD CRUMBS 2 Tbsp. REFINED FLOUR 1 Tbsp. For CASHEW CREAM you need FRIED CASHEW NUTS 100 GMs. OLIVE OIL 50 Ml. LEMON 1 No.

Directions

  • For cashew cream, take cashew nuts, olive oil and blend it together in the blender till both are emulsified together forming a creamy texture, then add fresh squeeze lemon juice and if you like you can add some salt and blend it again till it's mixed together.
  • For zucchini fritters Grate the zucchini and finely chop all spring onion, parsley, garlic and mix together.
  • Add salt and cumin powder and mix it properly.
  • Add Refined flour and Bread crumbs and mix it well. once everything is mixed properly make patties out of it.
  • Heat up the pan and add olive oil. Once it's hot put the patties in the pan and sauté it till they're golden brown from both sides.
  • Plate it and pour the cashew cream on top and finally serve it hot with the garnish of chop parsley on top, or else you can also serve the cream seperately as you like.
