Ingredients

Serves : 2
  • FOR MEATBALLS: 1 cup chicken mince


  • 1/2 onion chopped finely


  • 2 garlic cloves minced finely


  • 1 tbsp rosemary garlic seasoning


  • 1 tsp onion powder


  • 1 tsp garlic powder


  • 1 tsp black pepper powder


  • 1 tsp salt or to taste


  • 2 tbsp parmesan cheese ----------------------------------------------------


  • FOR NOODLES: 8 oz fettuccine noodles


  • 6 cherry/heirloom tomatoes


  • 1/2 bunch coriander leaves, washed and chopped


  • 3 garlic cloves, minced finely


  • 1 tsp lemon zest


  • 1/2 tsp salt or to taste


  • 1 tsp black pepper powder


  • 1/4 cup chicken broth


  • 2 tbsp parmesan cheese, grated


  • 1 tsp dried parsley


  • 1 tsp dried chives


  • 2 tbsp olive oil

Directions

  • FOR MEATBALLS: Preheat oven at 400 deg F.
  • Combine all ingredients mentioned under meatballs. Make equal sized balls of the mixture. Drizzle oil over the balls and let it coat the balls thoroughly.
  • Place meatballs on baking tray and bake for 15 minutes flipping them halfway through baking time.
  • Remove tray from oven and keep the meatballs aside. --------------------------------
  • FOR NOODLES: Boil fettuccine as per packet instructions. Drain the noodles, apply little oil and salt to the noodles.
  • Heat oil in saucepan. Add garlic, lemon zest, and coriander leaves. Saute for a minute.
  • Add cherry tomatoes and stir for few seconds.
  • Add chicken meatballs and toss well. Add broth and bring it to a simmer.
  • Add drained noodles and toss well with the herbs and chicken meatballs.
  • Sprinkle dried parsley, chives, and black pepper powder. Toss well again.
  • Sprinkle little salt if desired.
  • Transfer noodles to serving bowls. Sprinkle parmesan cheese over the noodles and serve immediately.
