Garlic & Herbs Chicken Meatballs Pasta

Ingredients

Serves 2

  • FOR MEATBALLS: 1 cup chicken mince

  • 1/2 onion chopped finely

  • 2 garlic cloves minced finely

  • 1 tbsp rosemary garlic seasoning

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp black pepper powder

  • 1 tsp salt or to taste

  • 2 tbsp parmesan cheese ----------------------------------------------------

  • FOR NOODLES: 8 oz fettuccine noodles

  • 6 cherry/heirloom tomatoes

  • 1/2 bunch coriander leaves, washed and chopped

  • 3 garlic cloves, minced finely

  • 1 tsp lemon zest

  • 1/2 tsp salt or to taste

  • 1 tsp black pepper powder

  • 1/4 cup chicken broth

  • 2 tbsp parmesan cheese, grated

  • 1 tsp dried parsley

  • 1 tsp dried chives

  • 2 tbsp olive oil

    FOR MEATBALLS: Preheat oven at 400 deg F.

    Combine all ingredients mentioned under meatballs. Make equal sized balls of the mixture. Drizzle oil over the balls and let it coat the balls thoroughly.

    Place meatballs on baking tray and bake for 15 minutes flipping them halfway through baking time.

    Remove tray from oven and keep the meatballs aside. --------------------------------

    FOR NOODLES: Boil fettuccine as per packet instructions. Drain the noodles, apply little oil and salt to the noodles.

    Heat oil in saucepan. Add garlic, lemon zest, and coriander leaves. Saute for a minute.

    Add cherry tomatoes and stir for few seconds.

    Add chicken meatballs and toss well. Add broth and bring it to a simmer.

    Add drained noodles and toss well with the herbs and chicken meatballs.

  • 10

    Sprinkle dried parsley, chives, and black pepper powder. Toss well again.

  • 11

    Sprinkle little salt if desired.

  • 12

    Transfer noodles to serving bowls. Sprinkle parmesan cheese over the noodles and serve immediately.
