Heat oil in kadai and fry cube sliced baingan
Remove the fried eggplant, add jeera and onion to same kadhai
Once onions are translucent add fried eggplant, sambhar powder, salt, turmeric, chilli powder
Mix well and let it cook till mixture leaves oil
Wash both the daal and pressure cook for 3 whistles
In kadai once the mixture leaves oil, add cooked smashed daal with 1 cup of water
Mix sambhar well and add coriander
Add jaggery and let sambhar come to boil
Serve with hot idlis, rice, dosa
