Ingredients

Serves 2

  • small Zucchini 5 nos

  • Noodles of your choice 150 gms

  • chopped tomatoes 3 nos

  • Cherry tomatoes (optional) 2 nos

  • red and green Capsicum each 1/2 nos

  • white Onion chopped 1 nos

  • Garlic pods chopped 2 nos

  • Chilli flakes 1 tsp

  • oregano 1/2 tsp

  • Olive oil 2 tbsp

  • Sugar 1/4 tsp

  • Olives 2-3 nos

  • grated Cheese 1/4 cups

  • Salt 1/2 tsp

Directions

    Clean and cut zucchini into juliennes just like noodles.

    I did it with a cutter within few minutes. You can also do it with a knife.

    Clean and chop tomatoes, onion and garlic pods.

  • 04

    Also cut bell peppers in juliennes.

  • 05

    Boil and drain noodles according to the instructions given in the packet.

    Blanch zucchini noodles in boiling water for 30 to 40 seconds.

    Put chopped tomatoes in a blender and make tomato puree.

    Heat olive oil, add in chopped onion and garlic. Saute for a minute. Add in tomato puree.

    Stir nicely and then add in tomato ketchup. Mix well.

    Add salt, sugar and cook in medium heat for 5 minutes.

    Add in the veggies and mix well.

  • 12

    Add boiled noodles and cherry tomatoes.Mix well.

    Add grated cheese, chilli flakes and oregano.

  • 14

    Stir nicely and remove from heat.

  • 15

    Transfer to serving dishes, add some olives and serve immediately.
