Ingredients

Serves : 2
  • 5 nos small zucchini


  • 150 gms noodles of your choice


  • 3 nos chopped tomatoes


  • 2 nos cherry tomatoes (optional)


  • 1/2 nos red and green capsicum each


  • 1 nos white onion chopped


  • 2 nos garlic pods chopped


  • 1 tsp chilli flakes


  • 1/2 tsp oregano


  • 2 tbsp olive oil


  • 1/4 tsp sugar


  • 2-3 nos olives


  • 1/4 cups grated cheese


  • 1/2 tsp salt

Directions

  • Clean and cut zucchini into juliennes just like noodles.
  • I did it with a cutter within few minutes. You can also do it with a knife.
  • Clean and chop tomatoes, onion and garlic pods.
  • Also cut bell peppers in juliennes.
  • Boil and drain noodles according to the instructions given in the packet.
  • Blanch zucchini noodles in boiling water for 30 to 40 seconds.
  • Put chopped tomatoes in a blender and make tomato puree.
  • Heat olive oil, add in chopped onion and garlic. Saute for a minute. Add in tomato puree.
  • Stir nicely and then add in tomato ketchup. Mix well.
  • Add salt, sugar and cook in medium heat for 5 minutes.
  • Add in the veggies and mix well.
  • Add boiled noodles and cherry tomatoes.Mix well.
  • Add grated cheese, chilli flakes and oregano.
  • Stir nicely and remove from heat.
  • Transfer to serving dishes, add some olives and serve immediately.
