In a pan heat ghee and add grated coconut...stir it for couple of mins
Than add milk and cook it
Add 1/2 cup milk powder and 1 tbsp sugar and cook it until mix gets dry
Add 1 tsp ghee and cardamom powder in it and most x it nicely
For white layer....Take condensed milk and add coconut in it and mix it at low flame
Add 1 tsp milk powder and mix it
Grease butter paper and put all white batter in it.Place another paper over it and roll it with rolling pin
Take out upper paper and spread carrot mix over it evenly
Roll it tightly with help of butter paper
Keep it in fridge for 10 min to set
Spread chopped pistachio on a butter paper and roll this log over it so that all pistachio stick over it
Cut it in slices and enjoy the carrot swiss roll
