Ingredients

Serves 10

  • carrot 2 cups

  • Dates 1 cups

  • Cashewnuts 1 cups

  • Sugar 2 cups

  • Eggs 3 nos

  • All purpose flour (Maida) 2 cups

  • Refined oil 1 1/2 cups

  • Vanilla essence 1-3 cups

  • Baking powder 1 tsp

  • Soda bicarbonate 1 tsp

  • Spices(powdered) 1 tsp

  • Honey 1 tsp

Directions

    Grate carrot and chop dates and cashewnuts

  • 02

    Powder sugar and also seperate yolk and white of eggs and keep aside

  • 03

    Now prehat oven to 375 degree

  • 04

    Sieve flour along with soda bi carbonate and baking powder,repeat this for 3 times

  • 05

    Mix powdered sugar, oil and egg yolks and beat this well

  • 06

    Add on all the dry ingredients enlisted and pour little honey

  • 07

    Drop vanilla essence

  • 08

    Beat the leftover egg whites until stiff and pour to carrot mixture

  • 09

    Grease a tray and pour this mix into desired shapes

  • 10

    Bake this for 1 and 1/2 hour and remove from oven

  • 11

    Allow to cool and serve delicious carrot cake pieces
