Ingredients

Serves : 10
  • 2 cups carrot


  • 1 cups dates


  • 1 cups cashewnuts


  • 2 cups sugar


  • 3 nos eggs


  • 2 cups all purpose flour (maida)


  • 1 1/2 cups refined oil


  • 1-3 cups vanilla essence


  • 1 tsp baking powder


  • 1 tsp soda bicarbonate


  • 1 tsp spices(powdered)


  • 1 tsp honey

Directions

  • Grate carrot and chop dates and cashewnuts
  • Powder sugar and also seperate yolk and white of eggs and keep aside
  • Now prehat oven to 375 degree
  • Sieve flour along with soda bi carbonate and baking powder,repeat this for 3 times
  • Mix powdered sugar, oil and egg yolks and beat this well
  • Add on all the dry ingredients enlisted and pour little honey
  • Drop vanilla essence
  • Beat the leftover egg whites until stiff and pour to carrot mixture
  • Grease a tray and pour this mix into desired shapes
  • Bake this for 1 and 1/2 hour and remove from oven
  • Allow to cool and serve delicious carrot cake pieces
