Take a big bowl add room temperature ghee & ice cubes ,with the help of beater cream the ghee, after 4-5 min you will see that ghee becomes snowy white & fluffy,remove the leftover ice cubes from ghee
Now add maida into this ghee & gently mix together, add chilled water to make a runny better
Heat Oil/Ghee in a deep vessel & add this better from a height into this patili/kadahi. 1 tbsp better at a time,with a help of knife make hole in middle of ghever & repeat the step for atleast 4-5 times to get a honey comb like texture.
Fry it until golden brown, & carefully remove it from ghee
Now make 1 strain sugar syrup,add some cardamom & rose water into syrup ,and pour 2-3 tbsp syrup on ghever ,let it soak for 1-2 hrs
Take a heavy bottom pan, add full cream milk & condense it untill u get thick rabadi, add sugar as per your taste( we already soaked ghever in sugar syrup), add cardamom powder , kesar dhage & let it cool completely
Now take ghever pour some rabadi over it, garnish with pistachios & almond slices & enjoy this heavenly dessert from Rajasthan.
