For the cookie dough :
Flour - 3 cups
Baking soda - 1 tsp
Unsalted butter - 1 cup
Salt - 1/2 tsp
White sugar - 1 cup
Eggs - 2
Vanilla extract - 2 tsp
For the icing :
Icing sugar - 1 cup
Liquid glucose or corn syrup - 3 tsp
Vanilla extract - 1/2 tsp
Milk - 3 tsp (or as required) Gel food colors (yellow, red and blue)
Sieve the flour, salt and baking soda together. Whisk the butter and sugar together until fluffy.
Add the eggs, vanilla extract and whisk till everything is combined.
Now mix in the flour mixture into the egg mix. Form a dough.
Cover it with cling film and chill it in the fridge for an hour. Now roll the dough, cut cookies using a cookie cutter.
Chill for 20 minutes and bake them in a preheated oven at 177℃ for 10-12 minutes. Cool the cookies.
To make the icing, whisk the icing sugar, liquid glucose and milk together to remove any lumps. The mixture should thick enough so that it holds shape once piped.
Now I have made the icing in batches as they tend to start hardening when in contact with air. So as required, 1 added color and piped.
Pipe the lining of the cookies and then fill in. Pipe the dots, strings on the cookies. The icing takes about 8-9 hours to completely harden. Once set, serve or box them up.
