Ingredients

Serves : 4
  • 1 cups flour


  • 1/2 cups sugar


  • 1/2 cups butter


  • 1 cups buttermilk


  • 1 tsp baking powder


  • 1/2 tsp baking soda


  • 1 tbsp lemon juice


  • 1/4 tsp salt


  • 1 tsp vanilla essence


  • 1 nos medium lemon


  • 1 cups whipping cream


  • 1/4 cups icing sugar


  • 3 nos large kiwis


  • 250 gms strawberries

Directions

  • For the lemon slice cake. Shift together flour, sugar, baking powder, baking soda and salt and keep aside. Mix together butter, buttermilk, essence lemon juice and lemon zest and keep aside. Mix wet and dry ingredients and bake into rectangular tins in preheated oven at 180°c for 25-30 mins. Cool down the cake and slice them
  • Take 1 cup whipping cream add 1/4 cup icing sugar and beat to get a fluffy whipped cream.
  • Now take a glass bowl. Place plastic sheet of cling film to it.
  • Take kiwis and slice them evenly. Place kiwi slices in the bowl as shown in picture
  • Apply a thick layer of whipped cream.
  • Now place a layer of sliced lemon cake.
  • Again apply a layer of whipped cream. Repeat the layers as above. This will depend on the size fof the bowl you have taken last cover the bowl with whipped cream. And refrigerate for 30 mins to 1 hour.
  • After freezing take a serving plate and take out the pudding upside down. Place some sliced strawberries on the boundary and serve.
  • Serve chilled
