1) Make nachos if not using ready made nachos 2) In a pan put tomatoes, habanero chilli and carrots with little water, keep on boil 3) Boil for ten minutes, let it cool down add salt and lemon juice then pulse it, do keep it coarse 4) In a bowl mix sweet corns, onions, capsicums, salt, pepper and herbs if mixing with tomato mixture, i prefer separately 5) On a platter lay nachos, top up with sweet corns mixture and serve with tomato mixture 6) Can also additionally serve with yogurt
