Wash and rinse quinoa under running water to remove any bitterness from the grains.
Heat ghee in a heavy bottomed pan.
Add in the rinsed quinoa and stir fry for about 5 minutes in medium heat. You will get a nice aroma from the pan.
When nice aroma starts emitting, add hot water to the pan, also add a pinch of salt and cook.
When quinoa becomes soft and water almost dries out, add milk and 1/2 cup of sugar.
Boil for 4-5 minutes to reduce the milk. Add cardamom powder.
In the meantime add 3 tablespoon of granulated sugar and 2 tablespoon water in a pan and bring to heat. Don't stir or touch the mixture.
When the mixture changes colour to light golden brown(that means sugar caramelizes), transfer the mixture to the firni immediately.
Give phirni a good mix and remove from heat to cool down.
When quinoa firni cools down to room temperature, add whipped cream. Whipped cream helps to make the firni very light and fluffy.
Also add in crushed nuts. I have only walnuts in my pantry. So I used them, you can add in any nuts of your choice.
Mix them nicely so that cream incorporates to firni. Transfer to a serving bowl and keep in the refrigerator to chill. You can also serve them in room temperature.
