Ingredients

Serves : 4
  • 2 cups dry ingredients: purpose flour 1 cup whole wheat flour


  • 1 1/2 tsp baking soda


  • 1/2 tsp salt


  • 3/4 - 1 cups chopped roasted walnuts


  • 2 nos wet ingredients: eggs


  • 1 tsp vanilla extract


  • 1/2 cups olive oil


  • 1/2 cups xylitol sugar substitute sugar (or granulated fine sugar)


  • 1/2 cups dark brown sugar


  • 4 nos bananas mashed


  • 2 tsp cardamom powder

Directions

  • Preheat oven to 350 deg f.
  • Grease a loaf pan with butter and dust it with flour. Keep aside.
  • Blend all wet ingredients except bananas to a smooth puree.
  • Gently mix mashed bananas with the wet ingredients.
  • Sift together flour, baking soda, and salt.
  • Mix nuts with flour.
  • Add flour mixture to wet ingredients and fold gently in one direction (not vigorously).
  • Pour batter in prepared loaf pan. Smoothen it out.
  • Bake in oven for 1 hour or until wooden skewer pierced in bread comes out clean.
  • Remove from oven and cool thoroughly.
  • Slice the bread with serrated knife.
  • Serve with butter or chocolate sauce.
