Boil the sweet potato in the pressure cooker for 5 – 6 whistles. Once cool down peel and mash it.
· Soak saffron in milk and keep it ready.
· Heat a pan with a tbsp of ghee and add chopped nuts and raisins fry them until golden brown. Remove from the pan and keep aside.
· Now add the mashed potatoes in the same pan and sauté them 3-4 mins.
· Then add 1 tbsp of ghee and milk, and stir well. Keep stirring in medium flame till the milk gets incorporate well with sweet potato and the mixture becomes thick.
· When the mixture starts to leave the sides of the pan, while stirring continuously.
· Add remaining ghee, saffron milk mixture, fried nuts and raisins, mix well and cook on medium flame for 4 to 5 minutes, while stirring continuously.
· Cook until ghee ooze out.
· Switch off the flame and serve Sweet potato halwa .
