Meatballs In Applesauce with Rice and Broccoli

  • 1-1/2 cups basmati or white rice

  • 3 cups water

  • 1-1/2 lbs or 675g extra lean ground beef

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp pepper

  • 1/2 cup chopped onion

  • 1/2 cup unsweetened applesauce

  • 1 can tomato soup (10 oz or 284 mL)

  • 1 tbsp liquid honey

  • 1 tsp hot chili sauce, asian style


  • Combine rice and water in large microwave safe pot. Cover and microwave at high 10 minutes, then medium 10 minutes.
  • Combine beef, garlic powder, onion powder, and pepper in a mixing bowl.
  • Form into 1" meatballs and place in a large nonstick fry an on medium heat, adding to pan as you form each meatball. Chop onion, then add to pan. In the uncleaned bowl, combine applesauce, tomato soup, honey, and chili sauce. Once meatballs have browned, pour sauce over top. Stir coat. Once sauce starts to boil, reduce heat to a high simmer.
  • Rinse broccoli in colander. Place in microwave-safe pot.
