For the grilled chicken: 1 chicken breast boneless
1 tbsp Paprika powder
1 tsp cracked peppercorns
1 tsp ginger garlic paste
1 tbsp lemon juice
1 tbsp salt or as per taste
1 tbsp oil
For the salad: 1 carrot sliced
1 cucumber sliced
1 onion diced
1 tomato diced
1-2 green/red chilly
1/2 cup cabbage thinly sliced
1/2 cup mixed sprouts
1-2 tbsp coriander leaves chopped
For the chilly lime dressing: 2 tbsps chilly flakes
3-4 tbsps lime juice
1 tsp coconut sugar
1/2 tsp pepper powder
1/4 tsp salt or as per taste
Wash the chicken breast nicely and pat dry with clean kitchen towel. Prick the chicken breast all over with a fork on both the sides.
In a bowl add all the ingredients mentioned in the grilled chicken list except oil and mix well.
Rub the mixture all over the chicken breast and keep aside for few minutes.
Meanwhile make the salad ingredients ready and set aside.
For making the dressing add all the ingredients in a bowl, mix well and set aside.
Turn on the gas stove and heat a grill pan on high heat.
Once the pan is heated add the oil and tilt the pan to coat the oil all over the pan.
Place the chicken breast to the grill pan and grill over medium heat for 5-6 minutes on the first side without flipping them.
Now flip the chicken and grill for 5-6 minutes. Turn off heat and allow chicken breasts to rest in pan for at least 5 minutes before cutting.
FOR ASSEMBLING THE GRILLED CHICKEN SALAD : Take a bowl or platter and place the salad around the plate. Place the sliced grilled chicken in the center of the plate. Drizzle the dressing all over the salad. Garnish with chopped coriander leaves and serve.
