Ingredients
Serves 4
For Pizza: 8 mini naans/flatbreads
10 sweet mini peppers, sliced
20 cherry tomatoes, sliced
1 small onion, sliced
2 cups shredded cheese
1 tsp oregano
1 tsp dried basil
1 tsp dried parsley ------------------------------------------------
For Pesto: 1 cup cilantro
1/3 cup cashews (or cashew powder)
2 tbsp olive oil
2 garlic cloves
1 long green chili (or as per desired heat)
1 tsp pink salt
2-3 tbsp water
Directions
Wash cilantro well.
Blend all ingredients mentioned under Pesto in a mixer till somewhat smooth puree is obtained.
Top Mini flatbreads with pesto then with veggies followed by shredded cheese. Sprinkle oregano, dried basil, and dried parsley over cheese.
Heat Grill pan and dab oil. Place the pizzas on pan and cover with lid.
Grill on medium low heat till cheese melts.
