Ingredients

Serves : 4
  • For Pizza: 8 mini naans/flatbreads


  • 10 sweet mini peppers, sliced


  • 20 cherry tomatoes, sliced


  • 1 small onion, sliced


  • 2 cups shredded cheese


  • 1 tsp oregano


  • 1 tsp dried basil


  • 1 tsp dried parsley ------------------------------------------------


  • For Pesto: 1 cup cilantro


  • 1/3 cup cashews (or cashew powder)


  • 2 tbsp olive oil


  • 2 garlic cloves


  • 1 long green chili (or as per desired heat)


  • 1 tsp pink salt


  • 2-3 tbsp water

Directions

  • Wash cilantro well.
  • Blend all ingredients mentioned under Pesto in a mixer till somewhat smooth puree is obtained.
  • Top Mini flatbreads with pesto then with veggies followed by shredded cheese. Sprinkle oregano, dried basil, and dried parsley over cheese.
  • Heat Grill pan and dab oil. Place the pizzas on pan and cover with lid.
  • Grill on medium low heat till cheese melts.
