Ingredients
Serves 4
4 thin cut chicken breasts
2 multicolored peppers cut in large square chunks
2 tsp kashmiri red chili powder
1 tsp paprika
1/2 tsp adobo chili paste
1 tsp onion powder
1 tsp garlic powder
2 garlic cloves minced
1 tsp cumin powder
1 tsp dried parsley
1 tsp salt or to taste
1 tsp black pepper powder
1/4 cup 1/4 cup olive oil or as needed
12 pretreated wooden skewers
Directions
Soak wooden skewers in water for 30 minutes.
Cut chicken breasts in 12 long strips.
Combine chicken strips and colored peppers with red chili powder, paprika, garlic and onion powders, minced garlic, cumin powder, salt, adobo chili paste, black pepper powder, and olive oil in a large bowl.
Heat a grill pan and dab oil with pastry brush.
String two pieces of peppers on the skewer and thread chicken strip (like sewing a cloth) and top it off with two pieces of peppers.
Place the wooden skewers on grill and grill chicken on medium flame from all sides till they appear lightly charred, approximately 20-25 minutes. Baste chicken with olive oil when flipping skewers.
Serve immediately with your choice of condiments or wrap it in a taco or burrito.
Note:: Grill in two batches.
