Ingredients

  • Chicken-3 Pieces




  • Lemons juice -2 pieces


  • Whole Green Cardamoms- 20


  • Whole Garlic Pod-1


  • Whole Cumin– 1 tbsp


  • Whole Pepper Corns- 1 tbsp


  • Whole Cloves- 10-15 Pieces


  • Whole Cinnamon Sticks- 1-2


  • Nutmeg- A Pinch


  • Red Wine Vinegar/ white vinegar- 2 tbsp


  • Olive Oil- 2 tbsp


  • Chilly Powder- 1 tsp


  • Curd/yogurt/- 2 tbsp


  • Salt to taste


  • Black pepper powder-1 tsp

Directions

  • At First, clean the chicken, then make incisions with a sharp knife on the chicken breast, legs and thighs. Squeeze one tablespoon lemon and rub the juice over the chicken. Rub salt and black pepper powder over the chicken and set aside for half an hour. Kabab Lebanise 4 Then help of mixture grinder grind the below ingredients fine smooth paste garlic,chilli powder, black pepper corns,nutmeg,vinegar/red wine vinegar,olive oil,green cardamom,cinnamon,cloves,cumin,lemon juice. Kabab Lebanise 1 Kabab Lebanise 2 Then take the fine paste in a bowl and add card/yogurt and a bit salt and mix very well. Kabab Lebanise 3 Then rub this mixture over the chicken and let the chicken marinate for a minimum of two hours or over night(for best test) in a refrigerator. Kabab Lebanise 5 Preheat the oven at 180° C Thread the chicken onto a skewer and cook in a moderately hot tandoor (clay oven) or in a preheated oven at 180°C/360°F/Gas Mark 6 for ten to twelve minutes, or until almost done. Baste chicken with a little oil and cook for another four minutes. Remove and set aside. Grill on one side for 6-7 minutes. Flip and grill on the other side for 5-6 minutes. For The Salad- – Tomatoes – Onions – – Olive Oil – Black Pepper – Salt – green chilli mix together with lemon juice, salt,black pepper and olive oil serve with kabab. Sprinkle black pepper powder and serve with mixed salad and lemon wedges mayonnaise and green chutney. Mouth-watering Lebanese Grilled Chicken is ready!!! sprinkle with a pinch of black pepper on top and serve hot with tea or cold drinks or as great starter for party snacks and its great for rainy season….
