1 Chicken breast with bone and skin
2 tbsp Bhut jolokia sauce (sauce is homemade)
1 tbsp Kashmiri red chilly powder
1/2 tsp cracked peppercorn
1/2 tsp roasted sichuan peppercorns
1 tbsp ginger garlic paste
2 tbsps lemon juice
1 tbsp salt or as per taste
1 tbsp Oil
Wash the chicken well and pat dry with clean kitchen towel. Make few slashes around the chicken breast and set aside.
In a bowl add all the ingredients, mix well and make a smooth paste.
Apply the paste all over the chicken and inside the slashes too and keep marinated for few minutes. The longer marination the better.
Preheat the oven at 180° for 10 minutes.
Place the marinated chicken in a grill tray or rack and grill for 5 minutes on each sides.
Now increase the oven temperature to 200°. Smear the left over sauce if any over the chicken and grill further for 3-4 minutes each on both side.
Remove from oven, let it cool down and slice as per your preference.
Serve with any dipping sauce or chutneys of your choice along with lemon slices, onion rings and slit chillies.
