Preheat oven to 200 Deg C/400 Deg F.
Wash and drain cauliflower.
Apply all ingredients under the Rub to the cauliflower.
Line a baking tray with parchment paper. Spread the cauliflower evenly on the tray.
Roast cauliflower for 35-40 minutes or until slightly crisp.
Remove from oven and cool thoroughly.
Chop the cauliflower very finely. Transfer to a big bowl.
Add rest of the ingredients to the cauliflower. Refrigerate for 15 minutes.
Heat a grill pan. Dab oil on it.
Take big ball of the cauliflower mixture. Make oblong shapes and grill the kebabs till lightly charred.
Serve with any condiments of choice (mint chutney, ketchup, ranch dressing, any flavored dip).
NOTE:---- While grilling, turn them very carefully as they very delicate.
Also, while removing them from pan to a plate, be gentle as they make break.
