Grilled Tomatoes on Toast with Grilled Sweet Peppers Mayonnaise & Cream Cheese

Ingredients

Serves : 4
  • 1 cup cherry tomatoes


  • 6-8 sweet mini peppers


  • 2 garlic cloves


  • 1 tbsp olive oil


  • 1/2 tsp salt and pepper each


  • 6 wooden skewers


  • 10 bread slices, toasted


  • 2 oz softened cream cheese


  • 2-3 tbsp olive oil for garnish


  • 1 tbsp chopped chives for garnish ------------------------------------------------


  • Marinade: 3 tsp olive oil


  • 1 tsp lemon pepper seasoning


  • 1/2 tsp garlic powder


  • 1/2 tsp pink salt


  • 1/2 tsp black pepper powder ------------------------------------------------


  • Mayonnaise: 2 egg yolks


  • 1 cup olive oil


  • 2 tsp paprika


  • 1 tsp onion powder


  • 1 tsp garlic powder


  • 1 tsp cracked black peppercorns


  • 1 tsp salt


  • 1 tsp lemon juice

Directions

  • Combine tomatoes with ingredients mentioned under marinade.
  • Combine peppers with olive oil, salt, and pepper.
  • Heat a grill pan. Dab olive oil onto the pan.
  • Thread 4-5 tomatoes onto the skewers.
  • Grill them on heated pan from all sides till lightly charred, approximately 3-5 minutes. Cover pan with glass lid while grilling.
  • Clean the grill pan and heat it again. Dab oil again.
  • Grill the sweet peppers along with garlic till nicely charred from all sides. Cover pan with glass lid while grilling, approximately 6-8 minutes.
  • Once peppers are cooled, peel off the skin from the peppers and discard them.
  • Combine all ingredients mentioned under mayonnaise along with grilled peppers and garlic.
  • With handheld immersion blender, macerate the ingredients by moving the blender up & down till smooth mayonnaise is obtained.
  • Cut the bread in triangles. Spread mayonnaise on the slices. Dab some cream cheese and then top it with 3-4 cherry tomatoes.
  • Drizzle little olive oil and chives over the tomatoes and serve.
