Ingredients

Serves : 6
  • Dough: 2 cups Wheat flour


  • 2 teaspoons oil for dough


  • 1 teaspoon salt


  • Grilled kathi: 2 tablespoons oil


  • 1/2 cup blanched sweet corn


  • 1/2 cup blanched green peas


  • 2 teaspoon Ginger-garlic paste


  • 1 onion chopped


  • 300 grams potatoes


  • 2 teaspoon salt


  • 1 teaspoon Chaat masala powder


  • 1 teaspoon black pepper powder


  • 1 teaspoon roasted cumin powder


  • Salad: 2-3 onions thinly sliced


  • 2 capsicum thinly sliced


  • 1 carrot grated


  • Juice of 2 lemon


  • 1 teaspoon Salt


  • 1 teaspoon Black pepper powder


  • 1 teaspoon chaat masala


  • Chutney: 100 grams coriander leaves


  • 3 green chillies


  • 4 cloves of garlic


  • 1/2 teaspoon salt


  • 1 teaspoon jaggery


  • Juice of 1/2 a lemon


  • 3-4 tablespoons oil for roasting kathi rolls

Directions

  • Prepare chutney by grinding all ingredients together that are mentioned for chutney.
  • Knead soft dough by adding flour, 1 teaspoon oil, salt. Apply another teaspoon oil and set aside for 20 minutes to rest.
  • Prepare salad by adding onions, capsicum, carrots, salt, spices and lemon juice. Mix everything well.
  • In a wok heat oil, add ginger garlic paste and saute. Add onions and roast till soft.
  • Add boiled green peas and sweet corn and cook.
  • Then add mashed boiled potatoes and mix well
  • Also add all the spices and salt and mix together. prepare kathis out of this filling. Add oil in a griller pan and roast the kathis over it.
  • Pinch big lemon sized dough balls and Roll out thin chapatis from the dough. Roast the chapatis just for few seconds.
  • Press with napkin to cook the edges.
  • Prepare all the chapatis in the same manner.
  • Make the rolls by applying a tablespoon of chutney on the chapati.

  • Add the salad
  • Roll chapatis and roast over the same grill pan using oil as required.
  • Cook from both sides evenly until light golden.
  • Serve hot with chutney and salad
