Ingredients

Serves : 6
  • 500 g Mutton Keema with fats


  • 2 medium sized onion


  • 1 inch ginger


  • 3 cloves of garlic


  • 1 fresh red chilli


  • 1 tbsp homemade garam masala powder


  • 1 tsp red chilli powder


  • 1 tsp white pepper powder


  • 1 tsp chilli flakes


  • 1/4 tsp cinnamon powder


  • 5-6 whole black pepper


  • 1 egg


  • 1 bunch of mint leaves


  • 1/2 teasoon salt


  • 1 tsp ghee to grease the griddle


  • For smoky flavour 1 piece charcoal and


  • 1 tsp ghee

Directions

  • Gather all the ingredients in a place.Roughly chop onion, ginger and garlic.
  • In a mixer grinder put all the ingredients except egg and ghee.
  • Grind to make a nice paste. Add an egg and grind again.
  • Transfer to a mixing bowl. Cover and keep aside for 1/2 an hour.
  • Arrange some iron seekh.
  • After rest time, take a handful of keema mixture and place in one seekh by pressing Keema with your hand. Rotate and press Keema to the seekh to make kebab shape.
  • Like this place all the keema to different seekhs.
  • Grease the hot griddle with some ghee and place 4-5 seekh and roast. Alternatively, you can grill the seekhs or skewers to A grill.
  • Rotate the kebabs in between to roast uniformly.
  • In the meantime place a piece of charcoal to open flame.
  • When the kebabs are almost done(about 10-12 min) , place the live charcoal to the griddle.
  • Pour 1 teaspoon of ghee over the charcoal and cover immediately.
  • After 2-3 minutes, remove the kebabs from griddle and roast other batch.
  • Serve immediately with some onion rings and salad.
