Ingredients
Serves 6
500 g Mutton Keema with fats
2 medium sized onion
1 inch ginger
3 cloves of garlic
1 fresh red chilli
1 tbsp homemade garam masala powder
1 tsp red chilli powder
1 tsp white pepper powder
1 tsp chilli flakes
1/4 tsp cinnamon powder
5-6 whole black pepper
1 egg
1 bunch of mint leaves
1/2 teasoon salt
1 tsp ghee to grease the griddle
For smoky flavour 1 piece charcoal and
1 tsp ghee
Directions
Gather all the ingredients in a place.Roughly chop onion, ginger and garlic.
In a mixer grinder put all the ingredients except egg and ghee.
Grind to make a nice paste. Add an egg and grind again.
Transfer to a mixing bowl. Cover and keep aside for 1/2 an hour.
Arrange some iron seekh.
After rest time, take a handful of keema mixture and place in one seekh by pressing Keema with your hand. Rotate and press Keema to the seekh to make kebab shape.
Like this place all the keema to different seekhs.
Grease the hot griddle with some ghee and place 4-5 seekh and roast. Alternatively, you can grill the seekhs or skewers to A grill.
Rotate the kebabs in between to roast uniformly.
In the meantime place a piece of charcoal to open flame.
When the kebabs are almost done(about 10-12 min) , place the live charcoal to the griddle.
Pour 1 teaspoon of ghee over the charcoal and cover immediately.
After 2-3 minutes, remove the kebabs from griddle and roast other batch.
Serve immediately with some onion rings and salad.
