Heat 4 tbsp oil in saucepan. Add bay leaf and cumin seeds and let them brown.
Add onions and saute till they caramelize.
Add ginger-garlic paste and saute for another minute.
Add tomatoes and cook till they turn mushy.
Add turmeric powder, red chili powder, chicken masala, coriander powder, and garam masala powder. Stir well.
Add chicken mince and mix thoroughly till all masala is well coated onto the mince.
Add salt to taste. Stir well again.
Cover pan with lid and cook chicken thoroughly till done and oil separates.
Add kasoori methi powder and mix again.
Cool mince thoroughly and then blend it in mixer till it's fine paste.
Soak bread slices in water, squeeze out excess water, and mash them well.
Add gram flour, egg, garlic, chopped onions, green chilies, bread mash, and coriander leaves.
Heat a grill pan. Apply oil with pastry brush.
With wet hands, take about palmful of mince mixture and make a patty shape.
Place on hot grill. Brush oil on top of the kebabs.
Let kebabs cook till they are nicely browned on both sides with visible grill marks.
Combine carrots, cabbage, and onions with mayonnaise.
On the heated oiled grill pan, heat the burger buns till insides have nice grill marks.
Apply the coleslaw on one side of bun. Lay few spinach leaves on it. Place one kebab on them.
Spread ketchup on the kebab. Cover the burger with other half of bun.
