Ingredients
Serves 4
Basmati rice 1 cups
splitted green Moong dal 1/2 cups
red Masoor dal 1/2 cups
Mint & Coriander leaves 1/2 cups
Buttermilk 2 cups
big Onion thinly sliced 2 nos
Ginger-Garlic paste 1/2 tsp
Garam masala powder 1/2 tsp
turmeric powder 1/4 tsp
Coriander powder 1/2 tsp
cumin powder 1/4 tsp
whole Black peppers 3-4 nos
Cloves 2-3 nos
Olive oil 2 tbsp
Salt 1 tsp
Directions
Clean and soak rice and dal together for about 2 hours.
With the help of 1 cup of buttermilk, make a thin paste of mint and coriander leaves.
Heat 2 tablespoons of olive oil in a pressure cooker.
Temper with whole black pepper and cloves.
Add in sliced onion and fry till golden brown and crisp (like beresta).
Next add in ginger garlic paste and saute for few seconds.
Drain water from rice&dal and add in the pressure cooker.
Stir to fry for a couple of minutes.
Add in all the spices mentioned above along with salt to taste.
Mix well and add in 1 cup of buttermilk. Also add in 2 cups of hot water or as required to cook khichdi. The consistency of khichdi sould not be thin. The rice and dal should be little mushy but still hold it's shape.
Pressure cook for 2 to 3 whistle or till done.
Serve this herbal khichdi with some seasoned yoghurt and buttermilk.
