2 cups spinach, chopped 1/2 cup grated paneer (cottage cheese) 1/2 cup cheese, grated 3 onions, finely chopped 2 capsicum, finely chopped 1/2 cup corn, boiled 1-2 green chilli, crushed 2 tbsp fresh coriander, chopped 1 tsp garlic, finely chopped 1 tbsp chilli flecks 1/2 tbsp oregano Salt to taste Oil for frying
Directions
Firstly Boil spinach for 2-3 minutes by adding little water to into it. Then blend it and make thick puree of it. Now in a bowl mix together spinach puree and bread crumbs and add salt into it. And in another bowl mix together cheese and panner and add onion, capsicum, corn, garlic, green chilli, coriander and add salt, oregano and chilli flakes to it. Mix it well. Now take some oil and grease your hands and take portion of spinach dough and make equal size balls of spinach disc. Make hole in a center and fill with cheesy veggie stuffing in it and gently close it well. And keep it aside. In this way make all the rolls. Now heat oil in a pan. Drop 3 to 4 balls at a time and fry it till it becomes golden brown in colour and crispy. Take it out and drop it on absorbent paper to remove excess oil from it. Now serve it with tomato sauce and chutney and enjoy this scrumptious spinach and cheese bombs.
