Ingredients

Serves : 3
  • 8 nos colocasia (arbi) leaves


  • 1 cups chick peas flour


  • 3/4 cups wheat flour


  • 2 tbsp rice flour


  • 7-8 nos green chillies


  • 1/4 cups coriander leaves


  • 2 inch ginger piece


  • 5-6 nos garlic cloves


  • 1/4 piece coconut


  • 1/2 cups jaggery dissolved in water


  • 1 tbsp white sesame seeds


  • 1 tbsp carom seeds


  • 1 tsp turmeric powder


  • 2 tsp garam masala


  • 1/2 tsp asafoetida


  • 1 tsp salt


  • 2 tbsp lemon juice


  • 2 tbsp fresh curd


  • 2 tbsp oil


  • 3 cups oil for shallow frying

Directions

  • In a mixing bowl take the flours.
  • In a mixture jar make a green paste using coriander leaves, green chillies, garlic cloves, ginger and coconut. To make the paste smooth add some water if required.
  • Now add this ready green paste to the flours and all the other ingredients mentioned for the batter also.
  • Mix everything properly and make thick batter. Keep this mixture aside for some time.
  • Wash all the Arbi leaves with water and dry them with a cloth. Remove the veins if they are thick.
  • Take single Arbi leaf and apply the ready batter on it's surface as shown in the picture.
  • Now fold both the sides of the leaf in such a way that they touch the centre vein. Then fold 1/3rd of the folded part from the above of the leaf as shown in the picture.
  • Again apply a little batter on the folded part and roll it tightly. Similarly make other individual rolls.
  • In a nonstick pan place all the rolls for shallow frying. Add 3-4 tablespoons of oil and carefully place all the rolls to get fried from all the sides. Cook the rolls on low flame.
  • When the above surface of the rolls becomes golden brown,switch off the gas and serve the arbi rolls with green chutney.
