Ingredients

Serves : 3
  • 250 gms mustard greens


  • 1 1/2 tbsp half broken rice powder


  • 2 nos green chilies


  • 4 nos garlic cloves


  • 1/4 tsp khar/baking soda


  • 1 1/2 tbsp mustard oil


  • 1/2 tsp salt


  • 1 1/2 cups water

Directions

  • Wash and clean the greens, chop them up and keep aside.
  • Chop garlic and green chillies and keep aside.
  • In a pot, take some water and bring it to boil, will be required later.
  • Now take a thick bottom wok, add mustard oil and heat till just smoky hot.
  • Add the chopped garlic and green chilies to the wok and stir-fry for a couple of minutes, till they turn golden brown.
  • Now Add those chopped mustard greens to the wok And sauté for some time.
  • Then sprinkle the baking soda over the wok and wait for some time till the mustard greens shrink.
  • Add salt as per taste.
  • Then add the half broken rice powder and with that add boiling hot water and stir continually to avoid lumping of rice powder.
  • Once the concoction comes to a desired thickness, turn off the heat.
  • Transfer the khar to a bowl immediately.
  • This preparation is best eaten when hot, along with some rice.
