Ingredients

Serves : 4
  • 3 cups spinach (washed & chopped)


  • 1 piece medium eggplant(diced into small cubes)


  • 1 nos small potato(diced into small cubes)


  • 1 nos radish chopped into cubes


  • 1/2 cups pumpkins peel & chopped


  • 1/4 cups green peas


  • 2-3 nos green chillies


  • 1 nos dry red chilli


  • 8-10 nos sundried lentil dumplings(fried)


  • 1 tbsp vegetable oil


  • 1/4 tbsp panch phoran


  • 1/2 tsp salt


  • 1/4 tsp sugar


  • 1 cups milk

Directions

  • Heat oil in a kadai .Add the panch phoran & dry red chilli .
  • Add the chopped vegetables & saute for 3-4 mints.Then add the chopped spinach.
  • When all the leaves have wilted & the water has evaporated add salt, sugar & the splitted green chillies.Don't cover the kadai to maintain the green.colour of Spinach.
  • Now add milk & cook for another few mints.Add the fried dry lentil dumplings.
  • Milky Spinach with a medley of vegetables is ready to serve.
  • Garnish it with fried dry lentil dumplings , serve with hot steamed rice or chapatis.
