spinach (washed & chopped) 3 cups
medium eggplant(diced into small cubes) 1 piece
small potato(diced into small cubes) 1 nos
radish chopped into cubes 1 nos
pumpkins peel & chopped 1/2 cups
green peas 1/4 cups
green chillies 2-3 nos
dry red chilli 1 nos
Sundried lentil dumplings(fried) 8-10 nos
vegetable oil 1 tbsp
panch phoran 1/4 tbsp
salt 1/2 tsp
sugar 1/4 tsp
milk 1 cups
Heat oil in a kadai .Add the panch phoran & dry red chilli .
Add the chopped vegetables & saute for 3-4 mints.Then add the chopped spinach.
When all the leaves have wilted & the water has evaporated add salt, sugar & the splitted green chillies.Don't cover the kadai to maintain the green.colour of Spinach.
Now add milk & cook for another few mints.Add the fried dry lentil dumplings.
Milky Spinach with a medley of vegetables is ready to serve.
Garnish it with fried dry lentil dumplings , serve with hot steamed rice or chapatis.
