Heat oil in a kadai .Add the panch phoran & dry red chilli .
Add the chopped vegetables & saute for 3-4 mints.Then add the chopped spinach.
When all the leaves have wilted & the water has evaporated add salt, sugar & the splitted green chillies.Don't cover the kadai to maintain the green.colour of Spinach.
Now add milk & cook for another few mints.Add the fried dry lentil dumplings.
Milky Spinach with a medley of vegetables is ready to serve.
Garnish it with fried dry lentil dumplings , serve with hot steamed rice or chapatis.
