Heat 1 tbsp mustard oil in a pressure cooker and add 1 big sliced red onion. Cook till onion becomes golden brown.
Add in 2 tsp of fresh ginger-green chilli paste and sauté for about a minute.
Add in 100 gms of washed and soaked chana dal (split bengal gram) and salt to taste. Sauté for 1-2 mins.
Add in 200 gms of thoroughly washed and chopped spinach and 70 gms of chopped methi (fenugreek), 1 tsp of turmeric powder, and 2 tsp red chilli powder. Cook till the water from the greens dries up.
Lastly, add in 2 large puréed tomatoes and 1 tsp of @everestspices garam masala. Stir for 2 mins and cover the lid of the pressure cooker.
Cook for 2 whistles and simmer for another 10 mins with the lid on (your cooker might blow 1-2 more whistles while on simmer).
