Spinach-Paneer Fried Rice

Serves : 4
  • 2 bowls basmati rice boiled (80%)

  • 1 cups spinach puree

  • 2 nos tomato

  • 10 nos basil's leaves

  • 2 nos betel leaves

  • 20-25 nos spinach leaves ( cut into long & thin strips)

  • 250 gms crumbled paneer

  • 1 tbsp fresh cream

  • 2 tbsp desi ghee

  • 2 tbsp melted butter

  • 1 tsp oil for tadka

  • 1 cups oil (for deep frying)

  • 1 tsp ginger paste

  • 2 tsp green chilly paste

  • 1/2 tsp kasuri methi

  • 2 1/2 tsp cumin seeds

  • 1/8 tsp asafoetodia

  • 1 tsp red chilly flecks

  • 1/2 tsp garem masala

  • 1/4 tsp sugar

  • 1 tsp salt

  • 1/4 tsp red chilly powder

  • 1/4 tsp turmeric powder


  • For Paneer Fried Rice :: cut tomato in small pieces. . Put into mixer jar, add basil and betel leaves. Make smooth paste. Pour in the bowl and keep aside.
  • In medium flame, heat nonstick pan add 1 tbsp ghee & 1 tbsp butter. Add tsp cumin seeds, saute for 30 seconds. Now mix 1 tsp green chilly paste & mix well.
  • In simmer, add tomato puree. Saute and mix well. Stir continuously and cook the puree till it become mushy form
  • Now adding salt to taste, kasuri methi, red chilly powder & crumbled paneer. Saute nicely for 1-2 minutes
  • Now add 1 glass hot boiled rice. Saute nicely & stirring for a minute. Switch off the gas. Put Paneer fried rice in a bowl and plate. Keep aside
  • For Spinach Fried Rice :: In medium flame heat a nonstick pan. Add 1 tbsp desi ghee and 1 tbsp butter. Now combine cumin seeds and asafoetodia. Sauteed and add ginger and green chilly paste. Stir for 30 seconds. Now add Spinach puree, stir continuously in low flame & cook it for 1-2 minutes till it's turned into thicky form.
  • Now add salt to taste, turmeric powder, gram masala and cream. Mix well and stirred for 30 seconds. Now add 1 glass hot boiled rice. Saute nicely & stir for a minute. Switch off the gas.
  • Spinach fried rice is ready. Put in a plate & keep aside
  • For Garnishing :: On high flame in a wok, heat oil for deep frying. Add spinach strips in heated oil, cooked it deep fry till becomes crispy. Switch off the gas.
  • Keep crispy strips on absorbent sheet.
  • On medium flame, heat oil in a nonstick pan. Add 1/2 tsp cumin seeds, chilly flack and crispy spinach strips. Add a pinch of salt and sugar. Toss it nicely for 30 seconds. Switch off the gas. Keep aside.
  • For Plating :: Take a bowl, plate and round shape mould. Inside the bowl/mould apply oil all the sides. Put 1st layer of Paneer Fried Rice and press it nicely. Put 2nd layer of the Spinach Fried Rice and press it carefully
  • Now take out in a plate and garnish on the top with spinach's strip. Serve hot-hot, tasty & healthy SPINACH-PANEER FRIED RICE. Enjoy!!
