Ingredients

Serves : 4
  • 1 cups fenugreek leaves


  • 1 cups chopped spinach


  • 1 cups red amarnath leaves


  • 1 cups radish leaves


  • 1 cups dill leaves


  • 3/4 cups chopped spring onions


  • 1 cups green peas


  • 1 cups flat bean's (broad bean's)


  • 2 nos medium size brinjal chopped


  • 1 nos big peeled & chopped potato


  • 3 nos tomatoes chopped


  • 2 nos sponge gourd


  • 2 nos green chillies


  • 1 inch ginger


  • 8 nos garlic cloves


  • 1 tsp lemon juice


  • 1 tsp finely chopped coriander leaves


  • 1 tsp salt according to taste

Directions

  • Firstly Wash all vegetables and chop all the leafy vegetables.
  • Remove Seeds of Broad Bean's and Pigeon Peas.
  • In the mixi jar add Ginger pieces, Garlic cloves and Green chilli then grind it to make a paste.
  • Now In the Pressure Cooker add 4-5 cup Water. Once water starts to boil. Add Pigeon peas, Flat Bean's then add Chopped Brinjal, Sponge gourd and Potato cubes.
  • Next add all Green leafy vegetables one by one.
  • Furthermore add chopped 3 tomatoes, salt according to your taste, additionally add crushed or Grinded Ginger-garlic-chilli Paste, 1 tsp Lemon juice mix well.
  • Close the lid and cook about 3-4 whistles or until they cooked.
  • Let the pressure releases, check the vegetables will be well cooked.
  • Now stir the cooked Vegetables with spatula at least 2 minutes. And slightly mash with masher. Or you can also coarsely blend with electric blender. Lastly add chopped coriander leaves.
  • Now Ghuto is ready. Serve with bajra rotlas, Ghee, Papad, garlic chutney. Traditionally Ghuto is eaten like this, but if you wish u can temper with garlic, finely chopped onions in tbsp oil.
  • Ideally the rotla is crushed coaresly with hands, and then Ghuto is poured over it. Add a dash of spicy garlic chutney mix well and enjoy.
